Technically it can be made to fit, but it is not optimal. The sidewalls will have to be bowed inwards and this will lower your contact patch as a result. 265 needs a 9 or 9.5″ wheel for optimal contact patch and performance. An 8.5″ wheel is best suited to a 245/255 tire.

No difference. Keep in mind 255 and 245 are sidewall width and having nothing to do with tread width. Depending on manufacturer a 245 could have more tread width than a 255. Tread compound has as much as anything to do with handling.
